1 12oz bag of frozen or fresh edamame beans (shelled)
1/4 cup grated parmesan cheese
1 clove of garlic (pressed)
Salt and pepper to taste
1 Tbsp olive oil
Preheat the oven
to 400 degrees F (200 degrees C).
Place the edamame
into a colander and rinse under cold water to thaw. Spread them out on a paper
towel to dry. In a bowl, mix the beans, parmesan, garlic, salt and pepper and olive oil
together – be sure to coat the beans in oil and seasoning evenly. Spread the
edamame onto a 9x13 inch baking pan lined with a silpat mat or foil. Bake in
the preheated oven until the cheese is crispy and golden, about 20 minutes.
